Ingredients

Serves: 2-4 Time: 15-20 min

- 5 oz Yukon gold potato, cut in wedges

- 2 oz green beans, trimmed

- 1 tbsp apple cider vinegar

- 1 tbsp olive oil

- 1 tsp nutritional yeast

- ½ tsp ground mustard

- 1 can Great Northern beans, drained and rinsed

- 1 can tuna

- 1 oz kalamata olives

- 2 oz cherry tomatoes

- Salt and pepper to taste

Instructions

1. Steam the Veggies:

In a pot fitted with a steamer rack, add 1 cup of water and the potato wedges. Cover and steam over medium heat for 5–7 minutes. Then, add the green beans, cover again, and cook for another 3–5 minutes until the potatoes are soft and the beans are crisp-tender.

2. Make the Dressing:

In a large bowl, whisk together the apple cider vinegar, olive oil, nutritional yeast, and ground mustard.

3. Assemble the Salad:

Add the Great Northern beans, tuna, kalamata olives, cherry tomatoes, and the cooked potatoes and green beans to the bowl. Gently toss everything together until well-coated in the dressing.

4. Season & Serve:
